This fudge is beyond creamy, smooth and so very satisfying for that something-sweet craving that gets us so often. Any peanut butter lover will be blown away with this creamy fudge.
The best part about this recipe is the simplicity in mixing it up. It has basic steps that I walk you through in the instructions below. Nothing time consuming. The newest and most inexperienced cook can probably mix these up.
Unlike many low carb recipes, this one does not call for coconut oil but is instead made up of cream cheese, peanut butter and almond (or other non-dairy) milk as the base.

The best thing about this recipe is the final product. That’s my opinion. The rich flavor and creamy smooth texture of this low-carb fudge recipe is unlike any other I have tried.
- There is no added sugar or processed ingredients in this recipe unlike traditional fudge that is laden with sugary marshmallows, white sugar, chocolate chips and so much else that is not healthy for our bodies!
- Contains only a handful of simple ingredients unlike many other fudge recipes.

What do you use to make this easy fudge recipe?
- natural peanut butter
- cream cheese
- almond milk (I have also used cashew milk and oat milk)
- heavy cream
- Pyure, Truvia or other stevia or erythritol based sweetner
- caramel extract
- salt
Note: make sure you use an unprocessed, sugar-free peanut butter.
Recipe for low carb cream cheese fudge with peanut butter:
4 oz. (half a block) cream cheese
1 T almond milk
2 heaping T sweetener
1/4 tsp caramel extract
1 heaping T peanut butter
4 T cream
dash of salt
Optional, large handful peanuts
How to make easy low carb cream cheese fudge with peanut butter:
Mixing up this recipe is so simple and easy. Probably takes about 5 minutes flat!
- In a small saucepan over low heat, place the cream cheese, milk and sweetener. Whisk well until it is bubbly and the cream cheese is all stirred into the mixture.
- Remove from the heat and add the cream, peanut butter, caramel extract and pinch of salt. Stir well.
- Add the peanuts if desired.
- Stir well to till it reaches a creamy texture.
- Spread in a prepared dish lined with parchment paper. Some of my favorite type of dishes or containers to use are: loaf pan, plastic or glass food storage container, silicone molds, or more. These can even be made into individual “drop” type cookies on an baking sheet. Be sure to line it with the parchment paper.
- Place in freezer for several hours to harden.
- Then you can sut them into ready to eat pieces and store in an airtight container in the freezer. A glass jar also works great!
How to store homemade easy low carb cream cheese fudge with peanut butter?
Store in the freezer in an airtight container for up to two weeks. When ready to serve, I like to lift the parchment paper out, place it all onto a cutting board, and using a large sharp knife, cut the fudge into bite size pieces. I try to avoid cutting through the parchment paper but it happens sometimes and that’s ok!
I have not tried substituting almond butter for the peanut butter.
Yes, you can! The amount would probably stay about the same as listed in the recipe but I always suggest to play it safe and start with a little less then called for. You can always add more!
I have not tried this recipe with stevia powder. The sweetener options that I listed help to add quantity to the overall finished product, as well as help provide the delicious texture of the fudge mixture.

Low carb cream cheese fudge with peanut butter
Ingredients
- 4 oz (half a block) cream cheese
- 2 heaping T sweetener (Pyure, Truvia, In the Raw)
- 1 T almond milk
- 1/4 tsp caramel extract
- 4 T heavy cream
- 1 heaping T peanut butter
- dash salt
- optional peanuts
Instructions
- In a small saucepan over low heat, place the cream cheese, milk and sweetner. Whisk well until it is bubbly and the cream cheese is all incorporated into the mixture.
- Remove from the heat and add the caramel extract, heavy cream, peanut butter and dash of salt. Stir well until it is a creamy consistency.
- Add peanuts if using and stir well.
- Spread in a prepared dish lined with parchment paper or as little mounds/spoonfulls on a cookie sheet. See note section below for more ideas.
- Place in freezer for several hours to harden.
- Remove from the freezer anytime after several hours and pull the parchment paper up and out of the container. Place on a cutting board and cut into squares with a sharp knife. Try to avoid cutting through to the parchment paper, but if you do that's ok!
- Place squares back into container, avoiding picking up piece of the parchment paper with it. Cover and place back in the freezer.
- Take a piece out to enjoy for a treat! You can let it sit at room temperature for a few minutes before enjoying! Store for up to 2 weeks in the fridge.
