Every now and then I like to make a cabbage dish and this is one of my favorite ways to prepare it for our supper. It is very nutritious, made with simple ingredients, and packed with great flavors. You don’t have to be a cabbage lover to find this recipe delicious!

Healthy benefits of eating cabbage
Cabbage has many health benefits and offers us some vital and necessary vitamins and nutrients for our bodies. Making this recipe is a great way to get those health benefits from cabbage into our bodies!
Cabbage-
- contains many nutrients including vitamins C and K. It contains antioxidants, folate and is rich with vitamin K which are all powerful for aiding your metabolism.
- is also known for its cancer fighting qualities and ability to help reduce inflammation.
- is a low calorie food. Many people with health or diet issues, or that are on a keto diet or low carb diet, can consume cabbage without the harmful affects of processed foods, or even foods like potatoes that are higher in starches and carbs.
Why cook with cabbage?
There are many reasons I love cooking or using cabbage in recipes. Many cabbage dishes are easy one-pot meals.
This recipe is great as a main dish although some might consider it as a side dish.
Cabbage lasts a very long time! You can cut into a head of cabbage, wrap it in plastic, store it in the fridge and it will still be useable weeks later! Yes, you’ll likely have to cut off some brown edges and outer leaves, but no problem!
When considering making a coleslaw or other dish calling for cabbage, even if you don’t need all of it, go ahead and make the recipe! Don’t be hesitant just because you’re not making a huge batch and won’t need the whole cabbage head. It has a long life.
Some people with root cellars in their basements can store cabbages down there for several months over winter.
When I have leftover cabbage not needed for a recipe, or any other vegetable for that matter, I will either make another dish soon after, save to have on hand for when I need it in the following week, or freeze it for soups.

Equipment you will need:

Ingredient list for Low carb creamy cabbage:
- Butter
- About half a head of cabbage (or 1/3 of a larger head)
- Meat of choice (I use leftover cooked meats like ham, ground venison or ground beef, bacon, turkey or chicken, etc. This is a good place to use up any cooked meat you have on hand in the fridge or freezer. Left over ham is also an excellent choice).
- Cream cheese or “laughing cow” cheese
- Diced onion
- A little bit of salt and black pepper
It would be scrupmtious if you replace the butter with bacon drippings. Yum!
How to make Low carb creamy cabbage
Thinly slice desired amount of green cabbage and about 1/4 of a large onion. Prepare meat.
Melt a tablespoon of butter in a skillet on low to medium heat until golden brown, then add onion, tossing to coat. Cook slightly, then add the shredded cabbage.
Once cabbage is tender and soft, add heavy cream, seasonings and cream cheese or laughing cow cheese.
Add meat of choice. Continue to simmer until done. Cooking time will vary depending on how “done” you want your cabbage.
Note on meat: if you are on a strict keto diet, check meats for added sugar.
Low carb creamy cabbage can be stored in the fridge for up to several days. You can store in a pot, jar or container.
You can also divide out into portions for each daily size serving. Small containers work best for this.
There are many easy side dishes that can be served with Low carb creamy cabbage. Some that I recommend are- a green salad, biscuits, applesauce tapioca, and diced seasoned potatoes.

Low Carb Creamy Cabbage
Ingredients
- 1-2 Tablesoons Butter, coconut oil or bacon drippings
- 1/3-1/2 head cabbage (amount depends on cabbage size)
- 1/2 small diced onion
- 2 wedges laughing cow cheese (or 2 T cream cheese)
- 1 cup cream
- dash salt and pepper
- About 1 cup Prepared meat of choice- diced ham, chicken, bacon
Instructions
- Thinly slice desired amount of green cabbage
- Dice onion and prepare meat
- Melt butter in a large skillet until golden brown
- Add onion and cook briefly
- Add sliced cabbage and stir to mix everything together
- Add laughing cow cheese or cream cheese and continue to stir
- Cook on low-medium heat, stirring often
- When cabbage has cooked, add meat and seasonings. Add some more cream if needed. You want a nice creamy sauce covering the cabbage mixture
- Serve hot and enjoy!
