Strawberry season is one of my favorite fruit seasons! I have fond memories when I was a little girl of going to a strawberry patch and picking several buckets with my family and friends.
We’d take them back to the house and make up jam, smoothies, yummy desserts and more!
In my later years at home we had our own large strawberry patch that we could harvest from which was so much fun and such a blessing and reward to have that fresh fruit right out in our back yard!

Then the first year after I was married, my friend and I would spend the strawberry season picking for a local fruit farm and earning a little something extra. So I have lots of strawberry memories in my past, lol.
This recipe doesn’t have any cream cheese layer or mixture but has a fluffy whipped cream swirl throughout the strawberries.
Also known as strawberry delight, this healthy strawberry dream dessert is like a fluffy pink frozen treat with swirls of creamy white goodness.
Some favorite summertime desserts are ice cream desserts, frozen layered desserts and other things with graham cracker crusts, cream cheese and fruit. This strawberry dream dessert is just as good if not even BETTER!

What kind of strawberries to use?
You can use frozen or fresh strawberries in this recipe but fresh seem to work better as the frozen ones let out a lot of juice that runs through the dessert during the freezing time. You can totally do frozen strawberries- just thaw and drain them first.
When to serve this healthy strawberry dream dessert
I love to serve this frozen strawberry dessert when we have company during the summer, or for birthday parties, or to take to a friends house. It is always a big hit during the hot months and is a fun treat to serve to others.

Pro tips and other things to know
Make sure you allow the crumb topping mixture to cool before sprinkling on top of the dessert.
Allow the frozen dessert to thaw at least 15 minutes before serving. Otherwise it will be too hard to cut and the taste and texture won’t be as creamy and sweet.

Recipe for healthy strawberry dream dessert
1 1/2 cups slightly mashed strawberries, fresh or frozen (thawed). Sliced strawberries work also. I like to pulse whole strawberries in the food processor until they are broken down. This makes for a nice pink color in the dessert with not too big of strawberry pieces.
1/3 cup sweetener of choice (I like to use unrefined sugar)
1 teaspoon lemon juice
1 1/2 cups heavy cream whipped or 1 tub cool whip
1 cup crushed pineapple
Crumb topping:
1 1/4 cups quick oats
3 T flour of choice
1/3 cup sweetener of choice (honey or unrefined sugar works good)
6 tablespoons butter, melted
Instructions for strawberry dream bars
Make the topping:
Mix the quick oats, flour, sweetener and melted butter together. Bake at 350 for 15 minutes or until slightly golden brown. Be careful to not over bake though! Remove from the oven when done and set on the side to cool. (To speed up the cooling process you could set this in the fridge for a few minutes).
Make the strawberry mixture:

If you are making your own whipped topping then prepare that in a stand mixer or with a hand held mixer. Whip on medium to high speed until stiff peaks form.
Prepare the strawberries. Take off the tops, (I like this handy dandy strawberry stem huller) and either mash with a potato masher by hand or I like to pulse whole strawberries in the food processor until they are broken down. This makes for a nice pink color in the dessert with not too big of strawberry pieces. Sliced strawberries can also be used.
In a large bowl mix together the strawberries, sweetener, lemon juice, whipped cream (or cool whip) and crushed pineapple. (Remember to drain the juice off the pineapple first). Don’t over mix this.
Spread in a baking pan and sprinkle the cooled crumb topping on top of the strawberry mixture. The topping should lightly fall into the strawberry mixture.
Freeze for 6-12 hours until firmly set. If you are not planning to serve this until the next day or two then be sure to cover in plastic wrap or with a lid, to avoid any freezer burn or freezer taste.
Allow to sit at room temperature for up to a half hour before serving, or it will be very hard to cut and serve!
Best if eaten within 2-4 days.
You can enjoy this special treat anytime of the year, but our family especially loves having this during the hot summer months, or in the middle of strawberry season!
Store leftovers in the freezer in a covered pan or airtight container.
