I love making easy breakfast recipes. For some, mornings are the busiest time of the day and the meal time can be very hectic.
When using the crockpot, also referred to as slow cooker, it can cook all night on the warm setting and be ready to go for a filling breakfast in the morning. Nothing is better on a cold morning then a nice warm bowl of oatmeal. Here is one of my favorite crockpots to use!

My healthy baked oatmeal with maple syrup recipe uses the crockpot which means it can be made ahead of time. Your morning won’t feel quite as rushed. Plus your kids will love this recipe!
If you are one that is hooked on the instant oatmeal packets, then you should try this recipe instead! So much more nutritious and tasty.
This recipe is made with maple syrup and is not overly sweet.

Benefits of oatmeal:
Oatmeal is a good source of carbs. Did you know that oatmeal is a complete source of protein? No wonder it has become a staple in the United States and many other places as a healthy breakfast food.
There are many health benefits involved here- oats are known to lower blood sugar and cholesterol levels and also contains a variety of vitamins including b vitamins, healthy fiber, minerals and antioxidants.
Oats provide a satisfying feeling of fullness, making oatmeal a good option for those watching their food portion intakes. A single portion of oatmeal can go a long way for many people!
They are naturally gluten free, although in the processing facilities cross contamination happens making oats not technically “gluten-free” in entirety anymore. Some people that have a gluten sensitivity or celiac disease usually need to be extremely cautious and only consume oats that are certified gluten free.
Recipe ingredients-
Oats-there are many types of oats-I like to use rolled oats (old fashioned oat/whole oats) in my baked oatmeal, although some people prefer steel-cut oats, oat groats, or quick oats / quick-cooking oats.
Maple Syrup- my recipe does not use brown sugar for a sweetener but instead I use a wholesome and nutritious, from the earth, pure maple syrup.
Milk-most commonly used is regular cow milk, but many non-dairy milks would work just fine. Coconut milk, almond milk and more.
Eggs- try to source local, fresh and non-gmo when possible
Melter butter (or coconut oil)
Baking powder
Salt
Vanilla
dash of salt
Optional add in’s-
~ dried fruits can be added in to the mixture, also-bananas, apples, apricots etc.
~ chocolate chips make for a yummy gooey, sweet breakfast treat
~ shredded carrots can make a variation for a carrot cake oatmeal
There are many different ways to serve baked oatmeal:
Some of my favorite toppings are:
Pure maple syrup
Fresh fruit as well as pie filling, jellies or other canned fruit. Canned peaches are our favorite!
Pumpkin puree can be added to the raw baked oatmeal to make a tasty baked pumpkin oatmeal.
Peanut butter or other nut butters
Fresh sliced bananas (here you get a taste of a banana bread oatmeal.) Yum!
Recipe:
4 cups oats
2/3 cup maple syrup
2 eggs
2 2/3 cups milk
1/3 cup melted butter or coconut oil
2 teaspoons baking powder
1/2 teaspoon vanilla
dash salt
How to make crockpot baked oatmeal with pure maple syrup:
For the basic recipe:
In a mixing bowl combine eggs, maple syrup, melted butter and milk. Whisk till incorporated.
(Tip-Use a large liquid measuring cup for this instead of a bowl. First measure the milk, then add the rest of this ingredients. This will help avoid extra dirty dishes to wash).
Stir in the kind of oats that you are using, baking powder, salt, the vanilla and any additional add-ins that would need to be added before cooking.
(Refer to the list above to decide what add-ins you might choose.)
Combine ingredients together.
Pour slowly into crockpot. Put lid on and adjust the setting to warm.
The cook time can vary slightly depending on the exact type of crockpot.
Tools you will need:
crockpot (some people cook with an instant pot but that would only work as far as I know, if you start it right away when you get up in the morning)
crockpot (see picture below)
mixing bowl (I like to use a large glass measuring cup to first melt the butter in, then add the remaining liquid ingredients into and stir together)
measuring cups
measuring spoons
spoon or spatula
whisk

Crockpot baked oatmeal with pure maple syrup
Ingredients
- 4 cups oats
- 2/3 cup maple syrup
- 2 eggs
- 2 2/3 cups milk of choice
- 1/3 cup melted butter or coconut oil
- 2 teaspoons baking powder
