- 4 cups apples, sliced and peeled
- 1/3 cup pure maple syrup
- 1/2 t cinnamon
- 2 T Tapioca granules or cornstarch
- 1/2 cup water (may need more added during baking time)
- 1 3/4 cup oats (can use 1/2 cup flour-it helps to give a crunchier topping)
- 1/4-1/3 cup pure maple syrup
- 1/4 cup coconut oil or butter
This recipe makes a 8x8 pan although it can be doubled for a 9x13.Preheat oven to 350. Slice and peel apples into baking dish. Add maple syrup, cinnamon, tapioca granules and water. Stir together. Set aside.Melt oil in large glass dish.Add oats and maple syrup. Mix till incorporated and sprinkle evenly on apple mixture. Bake for 40-50 minutes or until apples reach desired tenderness. Baking time will depend on the apple variety used. Also, check half way through to see if more water is needed. (It moistens the apples to allow them to cook and water can escape into the oven). Remove from oven when done and allow to cool slightly before enjoying!
