Freshly Milled Kamut Brownies
Freshly milled Kamut brownies are the all-time traditional favorite but much healthier with their ancient grain health benefits! Sweet and chocolate-y, these brownies are perfect for healthy desserts and snacks and can be used for any time!

Who can resist a gooey and sweet chocolate brownie?
These freshly milled brownies are a new favorite around here. I made some on the weekend and we enjoyed then with homemade ice cream on Sunday evening. A cup of homemade latte is also great with these brownies!
I love home cooking and preparing different foods to feed to my family. Their faces show eager anticipation and appreciation, both before and after the meal. Some of our current favorite dinners are skillet meals, Swedish meatballs and these freshly milled Kamut muffins.
What is Kamut?
In this recipe, Kamut is the star of the show. Not only does the kamut grain offer more nutrients and minerals then regular whole wheat flour, but when it is freshly milled, there are additional benefits and better taste available!
So what is Kamut?
Kamut is an ancient grain that has Egyptian origins and has not been processed or genetically altered. It may be more commonly heard of as khorasan wheat. My family was introduced to kamut very early in our homesteading/grinding whole grain journey and it immediately became the one and only replacement for all purpose flour for us.
There are many kamut recipes available online or in cookbooks, but finding ones that are to be favorites to replace white flour recipes, can be challenging. This recipe is one that you can count on and that can become a new staple for you.
Economically, right now kamut is more difficult to find available for purchase. I have been getting mine here.

Why Fresh Milled Grain?
The internet and the world around us is becoming more aware and interested in the benefits of grinding whole grains and using “fresh milled flour”, which is essentially grain kernels that are freshly ground. So grind your grain and bake with it right away!
Using fresh flour that you mill yourself means you get the benefits of rich and fresh flavor with a slightly nutty taste and texture.
Supposedly, flour starts loosing its nutritional components as soon as THREE days after being ground! Wow! That says a lot about the benefits of freshly ground grain!

Why you should make these fresh milled Kamut brownies
Healthy for you: Freshly milled Kamut flour is the star of the show! These brownies are not like regular white flour brownies! They contain less sweetener and use a healthier sugar alternative, (unrefined evaporated cane juice is a great option) and an ancient grain known as Kamut. Kamut is higher in nutrients and fibers then regular white flour.
Easy to make: These fresh milled brownies are quick to mix up and bake in less then an hour total. Perfect for company or get-togethers! This is just a one bowl mess and they bake in an easy square baking pan.
Delicious and full of flavor: Who doesn’t love a slice of brownie? We all know what a good brownie tastes like. Sooooo good. This one is everything you are looking for in a brownie recipe, plus it is much healthier for you with the ancient grain and freshly milled option.
Tips and tricks:
Do not over bake!
Allow the brownies to cool before cutting.
Store in an airtight continaer! These brownies can dry out fast if they are exposed to air for long periods of time so ensuring they are in an airtight container will prolong their best life!
The instant coffee is not necessary but adds intense flavor! (My favorite)!
This recipe is not egg free but you can experiment with using an egg replacement option like flax seed and water or EnerG egg replacer from Amazon.
Equipment you will need:
Mixing bowl or mixer
Measuring spoons and cups
Mixing spoon or spatula
8×8 inch glass baking dish

Recipe
1/2 cup butter, melted
1 1/4 cups unrefined sugar or evaporated cane juice or a sugar free sugar replacement (I like this one)
1 tsp vanilla
3/4 cup fresh milled Kamut flour or flour of choice
1/2 cup cocoa powder, unsweetened
1/2 tsp salt
2 eggs
2 tsp instant coffee granules (optional, but adds great flavor!)
Directions
Melt the butter in a small saucepan and add the sweetener to slightly dissolve.
Mix the flour, cocoa powder and salt in a medium size mixing bowl. You can use a hand mixer if you want to.
Add the butter mixture to the bowl and stir well.
Add the eggs and vanilla.
Add the instant coffee if using and mix well.
Preheat oven to 350 and grease a 8×8″ pan or line with parchment paper.
Pour batter into the prepared pan.
Bake for 20-25 minutes. Set the time for the 20 minute mark and start checking every couple minutes after that. You do not want them to overbake. (Keep in mind whole grain should be slightly under baked because it’s a denser grain which tends to dry out faster).
When they are done, remove from the oven and cool.
Allow to cool completely before cutting. Store covered or in an airtight container to prevent them from drying out.

What kind of flours can be used in this recipe?
I like to use fresh ground kamut flour but there are many other flour options that are a suitable replacement!
Some common ones are, Einkorn, Spelt, whole wheat and gluten free blends.
