Kamut Pancakes

Delicious with a slightly buttery and nutty taste, these are easy to make and enjoyed by the entire family!

Ingredients
  

  • 2 cups freshly ground kamut or other flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons oil or melted butter
  • 2 tablespoons maple syrup
  • 2 eggs
  • 2 cups milk/buttermilk or water (I usually use a mixture of whatever I have on hand)
  • 1 teaspoon vanilla

Method
 

  1. Mix liquid ingredients all together
  2. Stir in dry ingredients
  3. Do not overmix. Allow a few clumps to remain.
  4. Let mixture set for 5 minutes
  5. In the meantime grease and heat your griddle or skillet
  6. When griddle is nice a piping hot, carefully spoon batter on.
  7. Flip when bubbly.
  8. Continue till batter is all used up. Keep warm till serving
