Mix up the meatball ingredients together well
Form into small-medium size balls with your hands or use a cookie scoop. You don't want to make them huge
Bake at 350 on a baking pan for about 15-20 minutes or heat a skillet till very hot with about 2 tablespoons coconut oil or butter. Cook meatballs in the hot oil or butter on medium heat, being careful to turn so they don't fall apart
Remove from pan
Keep drippings in the pan and add the butter
Melt the butter and add almond flour. Stir to combine. It will be clumpy, that is ok
Add the broth and seasonings
Whisk in the cream (if using sour cream wait to add till after it has simmered
Simmer on low for about 5 minutes
Sprinkle the xanthan gum and whisk well
Simmer another 10 minutes or until thickened
Add sour cream here if using and whisk well
Pour sauce over meatballs if using a crockpot otherwise return meatballs to skillet
Sprinkle with parsley flakes and serve
