Easy Low carb Swedish Meatballs in Cream Sauce

Ingredients
  

  • 2 pounds ground meat blend (beef, turkey, pork, venison)
  • 2 eggs
  • 1/3 cup Almond flour
  • 1/2-3/4 teaspoon salt
  • 1 teaspoon onion powder or onion granules
  • 1 teaspoon garlic powder or garlic granules
  • 1 teaspoon Worcestershire sauce (optional)
  • For cream sauce
  • 1/2 stick butter
  • 1/4 -1/3 cup almond flour
  • 4 cups chicken or vegetable broth
  • 1/2-3/4 cup cream (or sour cream)
  • 1 tablespoon dijon mustard (optional)
  • 1 teaspoon salt
  • dash of pepper
  • apx 1 teaspoon xanthan gum

Method
 

  1. Mix up the meatball ingredients together well
  2. Form into small-medium size balls with your hands or use a cookie scoop. You don't want to make them huge
  3. Bake at 350 on a baking pan for about 15-20 minutes or heat a skillet till very hot with about 2 tablespoons coconut oil or butter. Cook meatballs in the hot oil or butter on medium heat, being careful to turn so they don't fall apart
  4. Remove from pan
  5. Keep drippings in the pan and add the butter
  6. Melt the butter and add almond flour. Stir to combine. It will be clumpy, that is ok
  7. Add the broth and seasonings
  8. Whisk in the cream (if using sour cream wait to add till after it has simmered
  9. Simmer on low for about 5 minutes
  10. Sprinkle the xanthan gum and whisk well
  11. Simmer another 10 minutes or until thickened
  12. Add sour cream here if using and whisk well
  13. Pour sauce over meatballs if using a crockpot otherwise return meatballs to skillet
  14. Sprinkle with parsley flakes and serve
