Kamut grain
Kamut it an ancient grain, also known as khorasan wheat; the grain of Egypt. It is easier to digest then regular whole wheat flour and has not been genetically altered. Kamut is also higher in protein and is easier for the body to digest then regular flour.
It is one of our favorite ancient grains that are out there available to us today. We use a grain mill and grind our own grain so we can have fresh Kamut flour to work with. I think it is very satisfying to have fresh flour and know that it has undergone very little commercial processing.
Growing up, we experimented with other whole grain flours. Anything from spelt flour, to rye flour and many others. We were made aware of kamut and as soon as we tried it we were hooked. We immediately began using kamut as a main flour in our baking.
Kamut bread was one of our first attempts with the new grain and it was fabulously amazing! Many other delightful goodies soon followed experimentation and we were not disappointed!
That’s how delicious kamut is!
Where to purchase kamut?
Ten years ago, kamut was pretty easy to source. Just like most other whole grains. We would get ours from coops we order through every few months.
Over the last few years unfortunately kamut has become increasingly difficult to purchase. Either it is not consistently in stock, or the price is outrageous.
I have been sourcing mine here and have been satisfied with the results so far!
Tips for using kamut
Kamut grain can be used straight as it is, as the only and main flour ingredient in a recipe, or you can use part white flour or whole wheat along with the kamut.
For those with sensitive taste buds or new to the grain, kamut might be on the strong side. In that case using part white flour (or whatever kind they are currently used to) might be a good idea when using kamut.
Kamut chocolate cake donuts

One reason I love blueberry muffins so much is because they are so versatile. Swap out the blueberries for raspberries, cranberries, or even chocolate chips. You might want to adjust or leave out some of the spices depending on what you add-in.
